Savory tarte tatin with chicory and Roquefort.

Ingredients

Parsley
Roquefort cheese
Balsamic vinegar
Butter
Salt
Black pepper
Puff pastry

About the Recipe

Step 1: Cut the chicory in half lengthwise. Warm a bit of butter in a pan and place the chicory in it, flat side down. Turn over after 3 minutes. Add the rest of the butter in clumps to the chicory, turn down the heat and put a lid on. Let stew for 10 min.

Step 2: Add the balsamic vinegar and season with salt and pepper. Let caramelize briefly. Spoon the chicory into a baking pan or baking dish and cover with the sheet of puff pastry.

Step 3: Give a nip in the puff pastry at the top and place in the oven at 180 degrees for 25 minutes.

Step 4: Invert the tatin onto a plate and top with crumbled roquefort and parsley.
