This is our personal favorite, because it tastes so healthy and delicious! It was in fact the first dish we started making that didn't have meat in it. We hope you enjoy it!
1. Cut the eggplant, courgette, onion and bell pepper. Add some olive oil to your skillet and glaze the onions.
2. Bake the vegetables until they are soft. Chop up the feta and avocado.
3. Warm up the tortillas.
4. Serve with hummus. Enjoy!
