Salmon and chicory oven dish

Perfect easy oven dish for a weeknight. It only takes half an hour to prepare. If you want to reduce the bitterness of the chicory, you can add a little sugar when glazing them.
1. Cut the chicory in half and remove the bitter core. Add a tablespoon of olive oil in a skillet and bake them on both sides until they are glazed. Add pepper and salt. Add 3 tbsp. of water and cover with a lid. Let simmer for 10 minutes and then let them drain well.
2. Add butter to a skillet. Add the flour and stir until it is smooth. Add the milk gradually until you reach a thick sauce. Add salt and pepper.
3. Roll the chicory in the smoked salmon. Put this in an oven tray, add the sauce and the bread-crumbs. Grill for 5 more minutes. Enjoy!
