Introduction

Steps

1. Preheat the oven to 200 degrees C. Cut the eggplant into 2 cm pieces and place in onto the baking sheet.

2. Add salt and olive oil.
Roast the eggplant during 30 minutes. You can use this time to make marinara sauce yourself!

3. Boil the pasta, rinse it with water and place it in a large pot.

4. Remove the eggplant from the oven and add garlic and herbs. Mix the marinara sauce with the capers and add this to the pasta.

5. Serve the pasta with the eggplant and some basil.
